Sweet Potato

Sweet potatoes are one of the best sources of beta-carotene, an important nutrient which our bodies can convert into vitamin A, to help keep our eyes and skin healthy, and help our bodies grow.

Sweet potatoes have a lower glycaemic index (GI) than usual white-fleshed potatoes, and so have less of an impact on blood sugar levels once you’ve eaten them.

Along with beta-carotene, sweet potatoes contain two other antioxidants : vitamins C and E. Antioxidants protect our bodies from the damaging effects of free radicals.

Sweet potatoes can be white, yellow, red, purple, and orange.
